Greek Paleo Avgolemono Soup
Avgolemono (ahv-goh-LEH-moh-noh) soup is a Greek soup traditionally made with orzo pasta and finished with egg and lemon. This version uses carrots and zucchini in place of the orzo. The egg acts as a thickener and the fresh lemon juice gives it a nice tangy kick. Not your ordinary soup!
Ingredients: Chicken, onion, carrots, zucchini, chicken stock, lemon, eggs, sea salt, pepper.
