Roasted Cauliflower & Za'atar Salad
Roasted Cauliflower & Za'atar Salad with yogurt and Tahini dressed chickpeas. It's a mouthful of protein leaving your tastebuds tingling and your belly full.
Roasted cauliflower, olive oil, sea salt, squash, avocado, chickpeas, yogurt, tahini, za’atar, parsley, spinach and the last of my pomegranate seeds!
Wait what is Za'atar? It's sumac, sesame seeds, dried thyme, dried oregano and cumin. I keep a jar of it around and it's just the best way to dress up a salad! Found in Middle Eastern and Mediterranean areas. My dear friend Nicci brought back Sumac from Turkey. I use it all of the time! It was used as a seasoning in Turkey because they didn't have access to lemons. I love that it adds a natural reddish color and lemon flavor to foods.
