Ingredients:  Sweet Potatoes; cauliflower, thyme, salt, black pepper, nutmeg, cloves, vegetable stock, lemon, apple cider vinegar & virgin olive oil.  Side Toppings include; pistachios, thyme and sunflower seeds.  The toppings provide this soup an added kick on the protein level making this soup a full balanced meal!

Note on Purple Sweet Potatoes:  High in Vitamins C, B3, B5, and B6, manganese, potassium, and copper; they’re also high in fiber.  Based on the color of the sweet potato you get a different antioxidant.  The purple sweet potato antioxidant is called anthocyanins. Unlike other anthocyanin-containing foods, like eggplant or blueberries, sweet potatoes have these antioxidants in the flesh as well as the skin, so it's a much more concentrated source also low glycemic index!  A great food for Paleo eaters!
